Blueberry Muffin (Paleo Friendly)
Healthy Blueberry muffin made with Almond Flour – Paleo, Vegetarian and Gluten Free

    Ingredients
    • 2cup Almond Flour
    • 1/2tsp Sea Salt
    • 1/2tsp Baking Soda
    • 1/2tsp Cinnamon
    • 1/2tsp Nutmeg
    • 2 Large Eggs
    • 1/4cup GheeMelted
    • 1/3cup Maple Syrup or Honey
    • 1/2tsp Vanilla Extract
    • 1 1/4cup Blueberries + Extra for Top
    Instructions
    1. Pre-heat the oven to 350 and line a muffin tin with muffin liners.
    2. In a large bowl, whisk together the almond flour, salt, baking soda, cinnamon and nutmeg. Set aside.
    3. In a medium bowl, whisk together the eggs, coconut oil, maple syrup and vanilla extract.
    4. Pour the wet ingredients into the dry ingredients and gently combine.
    5. Fold in the blueberries.
    6. Divide the batter equally between the 12 liners. Sprinkle additional blueberries over the top.
    7. Bake for 20-25 minutes until the tops are a golden brown.
