8largeeggs
½cupmayonnaise*Note 1
1tspyellow mustard
¼tspsalt
⅛tspgarlic powder*Note 2
⅛tspblack pepper
OPTIONAL ADD INS
¼cupthinly sliced scallions, plus more for garnish
1smallrib of celery, minced
paprika, mix in or add as garnish
Instructions
Bring a large saucepan of water to a boil. Gently add the eggs and reduce the heat slightly. Simmer for 11 minutes. Transfer immediately to an ice bath and cool completely.
Peel the eggs and finely chop before adding to a large mixing bowl.
Add the mayonnaise, mustard, garlic powder, salt, and pepper and gently fold until just combined. Do not over-mix.
Taste and adjust, if needed.
Refrigerate for at least 30 minutes for best flavor.
Notes
Note 1 - Use your favorite brand of mayo. If you use a sub-par brand the final product will suffer. Note 2 - Super basic egg salad doesn't include garlic powder, but I highly recommend adding it for an extra layer of flavor.
