4-5Habanero Peppers, Seeded*Note 1
10ozFresh Mango Pulp
¼cupRice Vinegar
1mediumShallot, Roughly Chopped
4largeGarlic Cloves, Peeled
1.5tbspFresh Lime Juice*Note 2
½tspGranulated Sugar*Note 3
Instructions
Wearing latex gloves, cut the habanero peppers in half and remove the seeds (if desired).
Add all of the ingredients into a blender, or food processor, and blend until smooth.
Pour the hot sauce into a medium size sauce pan. Simmer over medium heat for 10-15 minutes, stirring often.
Remove the pan from the heat and let the sauce cool to room temp. If desired, press the hot sauce through a mesh sieve to thin or add water, 1 tablespoon at a time, until your desired consistency is achieved.
Store the hot sauce in sterile jars leaving 1/2" space at the top. Store in the refrigerator until ready to enjoy.
Notes
Note 1 - Keep the seeds in if you prefer uber heat. You could also de-seed half the peppers vs. the entire lot. Habanero peppers are hot, so you must wear latex gloves before handling. Note 2 - Fresh lime juice makes a huge different to the final product. Try not to use bottle limed juice if you can avoid it.Note 3 - We only add 1/2 tsp to the entire batch, but if you're watching your sugar intake, you can omit entirely. If you like a sweeter sauce, add up to 1/4 cup of sugar. Recipe makes 1 cup.
