V8 Vegetable Juice, Regular or Spicy

Cooked shrimp, removed

Avocado, diced
½
Small Red Onion, diced
1
Small Jalapeno, finely diced
½
Lime, juiced
Tabasco Sauce, to taste
Cilantro, to taste
Instructions
Add the avocado, onion, jalapeno and lime juice to a medium size bowl and stir.
Chop the shrimp into bite size pieces and add to the avocado mix. Fold gently into the mixture.
Slowly pour the V8 juice over the shrimp mixture until you've reached your desired consistency. Use 1 can if you prefer less "cocktail sauce."
Carefully divide the mixture into 2 large martini glasses. Top with tabasco sauce and cilantro (if desired).
Enjoy immediately!
