Tender slices of juicy prime rib are piled high with caramelized onions, melty provolone cheese, and served on a toasted hoagie roll for a hearty, flavor-packed sandwich that’s perfect for lunch or dinner.
Cut the rolls in half horizontally. Place the bottom halves of the bread on a sheet pan. Optional: slather each piece with 1 tsp. of butter. Broil for 2-3 minutes, or until lightly toasted. Remove and set aside.
Pre-heat a large skillet with oil over medium-high heat. Add the onions and bell peppers and toss to coat. Cook, stirring occasionally, until the onions and peppers are soft. Set aside.
Add beef broth to a large skillet and turn the heat to medium. Once simmering, add the slices of prime rib and cook for 1 minute per side.
Top the bottom of the bread with the prime rib, pepper/onion mixture, and cheese. Return to the oven and broil for 2-3 minutes, or until the cheese is melted.
Place the top of the rolls on the sandwich and serve.
