16ozthick cut bacon
3cupschopped yellow onion*Note 1
2tspfinely minced garlic
½cuplight brown sugar*Note 2
⅓cupbalsamic or apple cider vinegar
¼cupmaple syrup
Instructions
Preheat a large skillet over medium heat. Add the diced bacon and cook until crispy, stirring frequently.
Transfer the cooked bacon to a paper towel lined plate and set aside.
Remove all but about 3 tablespoons of the bacon grease.
Reduce the heat to medium-low and add the onions to the skillet. Cook for about 20-25 minutes to caramelize, stirring frequently.
Add the garlic, brown sugar, vinegar, maple syrup, and cooked bacon to the skillet and stir to combine.
Simmer for 7-10 minutes, until the jam has thickened. It will thicken as it cools.
Transfer to a clean container and refrigerate up to 2 weeks.

Note 1 - white onions and red onions will also work.Note 2 - dark brown sugar will also work.
