Ingredients

  • 16 oz thick cut bacon
  • 3 cups chopped yellow onion (*Note 1)
  • 2 tsp finely minced garlic
  • ½ cup light brown sugar (*Note 2)
  • cup balsamic or apple cider vinegar
  • ¼ cup maple syrup

Instructions

  • Preheat a large skillet over medium heat. Add the diced bacon and cook until crispy, stirring frequently.
  • Transfer the cooked bacon to a paper towel lined plate and set aside.
  • Remove all but about 3 tablespoons of the bacon grease.
  • Reduce the heat to medium-low and add the onions to the skillet. Cook for about 20-25 minutes to caramelize, stirring frequently.
  • Add the garlic, brown sugar, vinegar, maple syrup, and cooked bacon to the skillet and stir to combine.
  • Simmer for 7-10 minutes, until the jam has thickened. It will thicken as it cools.
  • Transfer to a clean container and refrigerate up to 2 weeks.

Notes

Note 1 – white onions and red onions will also work.
Note 2 – dark brown sugar will also work.
