Prime Rib French Dip

Ingredients To Make A Prime Rib Dip
Here are the main ingredients needed to make a French Dip Sandwich Recipe. The full list can be found in the recipe card.
- Leftover Prime Rib: I created and tested this recipe using one 1/4″-1/2″ slice of beef from a leftover prime rib roast. If you prefer more of a classic French dip sandwich, shave or thinly slice the beef instead.
- Cheese: add slices of provolone, Swiss, or cheddar to add creaminess to the sandwich.
- Bread: any hearty roll will work, such as French roll, hoagie roll, or baguette. You can also make or buy garlic bread, which will save you the time of making the garlic butter spread.
- Au Jus: If you have leftover prime rib au jus this is a great way to use it up. If not, whip up a batch using homemade au jus mix or a store bought packet.

Here are a few variation ideas to consider when making leftover prime rib French dip sandwiches:
Add In Onions: Top with caramelized onions, fried onions, or Bacon Onion Jam for even more flavor and crunch.
Roast Beef Sliders: Use slider bread to make prime rib sliders instead of individual sandwiches.
Breakfast French Dip Sandwich: Throw an egg on it, like used in this open face roast beef sandwich, to make it a breakfast recipe.
Horseradish French Dip: Add a layer of tangy horseradish sauce for a zesty kick.

Recipe Tips And Notes
- Salt: I highly recommend sticking to unsalted butter. The prime rib rub, as well as the au jus will be already high in sodium.
- Garlic Bread: Utilizing pre-made garlic bread will cut down on prep time. Hello, Texas Toast.
- Au Jus: serve with hot au jus. The au jus will help keep the meat warm and soft while eating.
- Serve immediately for the best texture. The longer it sits, the softer the bread will become.

Prime Rib French Dip
Ingredients
GARLIC BREAD
- 4 French sub rolls (*Note 1)
- 5-6 large garlic cloves, minced
- 8 tbsp unsalted butter, softened
- 2 tbsp (OPTIONAL) chopped fresh parsley
PRIME RIB FRENCH DIP
- 4 slices leftover prime rib, ¼ inch – ½ inch thick (*Note 2)
- 6-8 slices Swiss or provolone cheese
- 1 batch Beef Au Jus, hot (*Note 3)
Instructions
- Pre-heat the oven to 350°F.
- Cut the bread in half (lengthwise) and place on the baking sheet.
- Add the butter, minced garlic, and parsley to a small bowl and mix to combine. Evenly spread the garlic butter mixture over the rolls.
- Bake for 12-15 minutes, until they're a bit brown on the outside and still soft in the center. Optional: broil for 2-3 minutes for an extra crispy crust.
- Remove the top pieces of bread and set aside. Top the bottom pieces of bread with 1 slices of prime rib and return to the oven. Bake for 5-7 minutes, to re-heat the prime rib. (*Note 4)
- Layer the cheese across the top pieces of bread and add to the baking sheet in the oven. Bake for 2-3 minutes, or until the cheese is melted.
- Remove from the oven and carefully place the top pieces of bread on the bottom pieces of bread to form the sandwich. Let stand for 2-3 minutes to cool down. Serve immediately with a side of au jus.
