Tender leftover prime rib is sliced into steaks, layered on garlic bread with melted cheese, and served with rich beef au jus for the ultimate leftover prime rib sandwich. Use any leftover prime rib recipe.
Cut the bread in half (lengthwise) and place on the baking sheet.
Add the butter, minced garlic, and parsley to a small bowl and mix to combine. Evenly spread the garlic butter mixture over the rolls.
Bake for 12-15 minutes, until they're a bit brown on the outside and still soft in the center. Optional: broil for 2-3 minutes for an extra crispy crust.
Remove the top pieces of bread and set aside. Top the bottom pieces of bread with 1 slices of prime rib and return to the oven. Bake for 5-7 minutes, to re-heat the prime rib. (*Note 4)
Layer the cheese across the top pieces of bread and add to the baking sheet in the oven. Bake for 2-3 minutes, or until the cheese is melted.
Remove from the oven and carefully place the top pieces of bread on the bottom pieces of bread to form the sandwich. Let stand for 2-3 minutes to cool down. Serve immediately with a side of au jus.

Note 1 - You can also use Hoagie Rolls, pre-made garlic bread, large French bread, ciabatta, or any other sturdy bread.Note 2 - Any leftover prime rib will work well. Keep in mind the prime rib rub utilized will influence the final flavor of the sandwich. Note 3 - Leftover Prime Rib Au Jus, Store-bought Au Jus, or homemade Au Jus all work well. Note 4 - Total time will depend on the thickness of the prime rib slices. Also keep in mind when you dip the sandwich in the hot au jus it will further heat up the beef.
