This homemade Au Jus Gravy Mix adds rich, savory flavor to your favorite dishes; it’s the perfect accompaniment for tender beef roasts, sandwiches, and more.

This au jus mix yields a total of 3 ounces, equivalent to three 1-ounce store-bought packets. The best part? It tastes just like McCormick Au Jus Mix because it uses many of the same McCormick spices—just without all the added fillers and preservatives.

Ingredients and Substitutions 

Here are the main ingredients required to make this au jus gravy mix. You can view the complete list of ingredients in the recipe card below.

Beef Bouillon: Knorr and Wylers are two popular brands; however, Knorr recently changed its formula, and it’s not nearly as good. If you need a low-sodium version, Herb-Ox offers a suitable alternative.

Water: You can use beef drippings or beef broth in place of the water to amplify the flavor. I highly recommend a no-sodium broth.

Cornstarch: if you prefer not to use cornstarch, use 1/4 cup of all-purpose flour instead.

Au Jus Mix Recipe

To make a batch of beef au jus, follow this formula: Mix 2 cups of water or beef broth with 4.5 teaspoons of the au jus mix and bring to a boil, whisking constantly. Boil the mixture for 4-5 minutes to thicken slightly from the cornstarch.

  • For thicker Au Jus Gravy, add more flour or cornstarch. 
  • Sodium Content – Most beef bouillon powders have a high salt content. Look for a lower-sodium version to cut down on the salt drastically.

Ingredients

Au Jus Mix

  • ¼ cup beef bouillon powder
  • ¼ cup corn starch
  • 2 tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp black pepper

Au Jus Recipe (Made With or Without Drippings)

  • 2 cups water, beef broth, or drippings (*Note 1)
  • tsp Au Jus Mix

Instructions

Make the Au Jus Mix

  • Add all the ingredients to a small bowl and use a whisk to combine. Store in an airtight container for up to 6 months.

Make Beef Au Jus Using The Mix

  • Add 2 cups of water or beef broth and 4½ teaspoons of the au jus mix to a small saucepan and bring to a boil, whisking constantly.
  • Turn the heat down to medium and let the mixture simmer for 4-5 minutes.

*Note 1 – You can use any combination of the 3, as long as it totals 2 cups.
