1tbspkosher salt, for boiling potatoes
2lbspotatoes, skinned and cut into 1-inch pieces*Note 1
8ozunsalted butter, melted
½cuphalf-and-half, warmed
15.2 oz packageBoursin cheese*Note 2
1tbspminced chives, plus more for garnish
½tspkosher salt
¼tspblack pepper
Instructions
Fill a large pot with water along with 1 tablespoon kosher salt.
Add the diced potatoes to the pot, while the water is still cold, and bring to a boil over high heat. Once the water boils reduce the heat to medium and set the timer for 18-20 minutes. Cook until potatoes can be easily pierced with a fork. Drain well and return to the pot.
Add melted butter and warm half-and-half and mash until almost fully combined.
Add Boursin cheese, chives, salt, and black pepper and mash until your desired consistency is reached.
Garnish with extra chives, if desired.

Note 1 - Use Russet, Yukon Gold, or Red Potatoes.Note 2 - Use your favorite flavor.Leftover and storage - Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheating - Reheat on the stove over medium-low heat. Add a dash of extra half-and-half to loosen up the potatoes.
