This creamy, cheesy rice recipe is the perfect comforting side dish made with simple ingredients like cheddar cheese, butter, and broth. It's easy, fast, and delicious.
Place the rice in a mesh sieve and place under cold running water until the water runs clear. This removes the excess starch. It will take approx. 2-3 minutes. Drain well.
Add butter to a medium-size saucepan over medium heat. Once melted, add shallot and sauté for approx. 3-4 minutes, or until soft.
Mix in the rice, broth, salt, and pepper and bring to a boil. Cover and reduce heat to the lowest setting on your stove. Simmer for 18-20 minutes, until the rice is tender.
Remove from the heat and add the shredded cheese. Mix and fluff with a fork. Taste and add extra salt, if needed.
