Ingredients

  • 1 cup basmati or jasmine rice (*Note 1)
  • 3 tbsp unsalted butter
  • ½ medium shallot, finely diced (*Note 2)
  • 16 oz chicken broth
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 4 oz white cheddar cheese, grated (*Note 3)

Instructions

  • Place the rice in a mesh sieve and place under cold running water until the water runs clear. This removes the excess starch. It will take approx. 2-3 minutes. Drain well.
  • Add butter to a medium-size saucepan over medium heat. Once melted, add shallot and sauté for approx. 3-4 minutes, or until soft.
  • Mix in the rice, broth, salt, and pepper and bring to a boil. Cover and reduce heat to the lowest setting on your stove. Simmer for 18-20 minutes, until the rice is tender.
  • Remove from the heat and add the shredded cheese. Mix and fluff with a fork. Taste and add extra salt, if needed.

Note 1 – any long grain white rice will work.
Note 2 – You can sub in a yellow onion if preferred.
