Oven Baked Ribs Recipe
While I love making ribs on the grill, it’s not an option year-round for most; it’s either too cold or too hot. So, baked BBQ ribs it is!
While I prefer St. Louis Pork Ribs, you can use any rib style you prefer. Oven baked beef ribs are also popular. The only difference will be the baking time.

How Long To Bake Ribs In The Oven
Spare ribs will take 3 hours in the oven to cook, while smaller back ribs take just 2 hours.

Flavor Variations
There are a ton of different ways to customize oven baked ribs; here are a few of my favorites:
Spicy – Add cayenne pepper to the bbq rub or sauce.
Dry – Omit the bbq sauce. You’ll still get the bbq flavor from the rub.
Sweet – Add extra brown sugar to the bbq rub.
Less Sweet – Omit or reduce the brown sugar from the bbq rub.

Recipe Tips
- When I’m not in the mood to make a homemade BBQ sauce, I use my favorite barbecue sauce: Sweet Baby Ray.
- Make sure the foil package is wrapped tight around the ribs. The steam cooks the ribs.

Drink Pairings
Classic BBQ pair well with Zinfandel, Pinot Noir and Chardonnay. A Chelada or Michelada would also work if you prefer a beer cocktail.

Oven Baked Ribs
Ingredients
BBQ Rub (*Note 1)
- ¼ cup brown sugar
- 1 tbsp paprika
- ½ tbsp garlic powder
- ½ tbsp onion powder
- ½ tbsp kosher salt
- 1 tsp black pepper
- ¼ tsp mustard powder
- ⅛ tsp cayenne pepper, optional for heat
RIBS
- 1 rack ribs (*Note 2)
- 1 cup barbecue sauce
Instructions
- Pre-heat the oven to 275ºF.
- In a small bowl combine the dry rub ingredients until well combined. Set aside.
- Pat dry the ribs and remove the membrane from the backside or score with a knife. Evenly coat both sides with the BBQ rub.1 rack ribs, ½ tbsp kosher salt, ½ tbsp onion powder, 1 tsp black pepper, ½ tbsp garlic powder, 1 tbsp paprika
- Wrap tight with aluminum foil, placing the meat side face up. Bake for 2 hours for baby back ribs or 3 hours for spare ribs.
- Carefully open the foil wrapping and drain the excess liquid. Evenly coat the ribs with the barbecue sauce.1 cup barbecue sauce
- Set the oven to broil and bake for a final 3-4 minutes. Watch carefully to make sure the sauce doesn't burn.
- Let the ribs cool for 10 minutes before slicing. Serve with extra BBQ sauce and enjoy.
