Cilantro Lime Rice is easy to make and the best side dish for all of your favorite Mexican recipes. It's the perfect accompaniment to Street Tacos, Pollo Asado and Carne Asada.This cilantro lime recipe can be made on the stove top or in a rice cooker in just 30 minutes. It's as quick and easy to make as Mexican Rice.

Ingredients
1tbspolive oil
1tspminced garlic
1cupBasmati or Jasmine rice*Note 1
1½cupwater (2 cups if making in a rice cooker)
1lime, juiced*Note 2
½tspsalt, plus more to taste
¼-½cupcilantro, chopped*Note 3
Instructions
PREP THE RICE
Place the rice in a mesh sieve and place under cold running water until the water runs clear. This removes the excess starch. It will take approx. 2-3 minutes. Drain well.
STOVE TOP CILANTRO LIME RICE
Pre-heat the oil in a large dutch oven or pot over medium-high heat. Add the rice and sauté for approx. 5 minutes until the rice is toasted.
Add the garlic and sauté for 30 seconds, until fragrant.
Add the salt and water and bring it to a boil. Cover and reduce heat to low. Simmer for 15 minutes, until the rice is tender.
Remove from the heat and let sit, with the cover still on, for 10 minutes.
Add the lime juice and cilantro and fluff with a fork. Taste and add extra salt, if needed.
RICE COOKER CILANTRO LIME RICE
Add the oil, garlic, rice, water, and salt to the rice cooker and stir to combine.
Following the manufacturers instructions for your model, fill to the appropriate waterline (ours takes 2 cups), close the lid and set to cook.
Once the rice is done cooking, add the lime juice and cilantro and fluff with a fork. Taste and add extra salt, if needed.
Notes
Note 1 - any long grain white rice will work.Note 2 - for even more citrus flavor, throw in some lime zest.Note 3- Start with 1/4 cup of cilantro and add more, to taste.
