Ingredients
1LbWhite or Cremini Mushrooms
¼CupExtra Virgin Olive Oil
¼CupWhite Wine Vinegar
2ClovesGarlic, Minced
2tspPacked Brown Sugar*Note 1
1tspLemon Juice
½tspDried Italian Seasoning
½tspblack peppercorns
¼tspCrushed Red pepper Flakes, Optional*Note 2
Kosher Salt, to taste
Optional: Chopped Fresh Parsley
Instructions
Bring a large pot of salted water to a boil. Add the mushrooms and cook just until tender, approx. 3-4 minutes. Drain well.
Add the cooked mushrooms, olive oil, vinegar, garlic, brown sugar, Italian seasoning, black peppercorns, red pepper flakes to a large bowl. Season with salt, to taste and gently mix to combine.
Transfer to an airtight container and place in the refrigerator for 8 hours to develop the full flavors.
To serve, bring mushrooms to room temperature and garnish with parsley, if desired.
Notes
Note 1 - Adding a small bit of brown sugar really develops the overall flavor and makes quite a bit of difference to the final product. I've tested it with and without (I tend to minimize sugar when I can) and I recommend keeping it.Note 2 - The red pepper flakes add flavor vs heat. Storage - Marinated mushrooms in a jar last up to two months when properly stored in the fridge in an air tight container.
