Ingredients
16ozbreakfast sausage roll*Note 1
1lbpotatoes, peeled and diced*Note 2
1smallonion, diced
1redbell pepper, diced
2clovesgarlic, minced
6eggs
¼tspground thyme
1cupshredded cheddar cheese
salt and black pepper, to taste
¼-½tspoptional: red pepper flakes
Instructions
Pre-heat a large skillet or cast iron skillet to medium heat.
Add breakfast sausage and cook until no longer pink, stirring occasionally. Use a wooden spoon to crumble the sausage as it cooks. Remove to a paper towel lined bowl. Set aside.
Drain all but 1-2 tbsp of the grease from the skillet. Add potatoes in a single layer and season with thyme, salt, and pepper. Cook, flipping occasionally, until fork tender (approximately 8-10 min).
Push potatoes to one side of the skillet. Add onion, bell pepper, and garlic to the other side. Sauté until softened (approximately 4-5 minutes).
Add the sausage back to the skillet and combine with the potatoes and vegetables.
Turn the heat to low. Use the wooden spoon to carve out 4 holes. Crack the eggs into the holes, sprinkle with salt, and pepper. Evenly sprinkle cheese over the top.
Cover skillet and cook until egg whites are set and cheese is melted. Garnish with green onion, salsa, and sour cream and serve.
Notes
Note 1 - You can use 8 sausage links (sliced) instead of ground sausage. Note 2 - Russet, Yukon and Red Potatoes all work here.
