Ingredients

  • Phyllo Cups – This recipe is made with Phyllo Cups, but you can easily substitute in Puff Pastry.
  • Spinach – Use fresh or frozen spinach. If using frozen, just make sure you wring out the excess water before using.
  • Feta Cheese – I highly recommend a full-fat Feta. I haven’t tested it with low fat, however the melting properties are different so your mileage may vary.

Preheat the oven to 400°F and set aside.

Prepare the Filling – In a large bowl, mix the feta, parmesan cheese, egg, garlic, shallots, oregano, salt and black pepper until combined. Fold in the spinach.

Prep The Cups – Fill the mini phyllo cups with the spinach mixture.

Cook – Bake for 7-9 minutes until the top is browned. Let rest for 3-4 minutes before serving.

Variations

  • Add Proteins – Add chopped cooked chicken or shrimp to the filling for a heartier bite.

My favorite brand of Phyllo Cups is Athens Foods, but any brand will work. In fact, if you prefer, Puff Pastry will also work in place of the Phyllo.
