Lamb Chop Marinade
This lamb chop marinade recipe is adaptable to your favorite herb—it works well with rosemary, mint, or dill. Better yet, add a little of each for even more flavor. I usually go with whatever fresh herb I have on hand.
When making this greek marinade for lamb chops, the quality of ingredients matters. Every component contributes to the final product’s flavor, texture, and appeal; shop accordingly.
This recipe makes 1 cup, which covers 1 rack of lamb or 6 lamb loin chops. You will need to double it if making a large lamb roast.

Cooking The Lamb
This marinade works extremely well in all lamb recipes using any baking style. I prefer to grill or bake lamb, over other methods, but air frying and pan searing work just as well. It’s a winner on Easter Dinner recipes.
I use this marinade to make Lamb Lollipops on the grill or pan seared. It also worked when making Smoked Rack of Lamb and Smoked Leg of Lamb.There are no limits.

Marinade For Lamb Chops Tips and Storage
- Dried Herbs – to substitute dry herbs for fresh herbs, use 1/3 of the amount called for in the recipe. If you’re out of rosemary, check out this list of Substitutes For Rosemary.
- Lemon – I highly recommend using fresh lemon juice vs bottled juice. You will be able to taste the difference in the final dish.
- This lamb marinade pairs extremely well with this lamb seasoning and lamb sauce.
- Try and marinate the meat for 12-24 hours for maximum flavor, however it’s ready to go after an hour.
- Storage – Store in an airtight container in the refrigerator for up to 4 days. The color will start to darken the longer it sits.

Ingredients
- ½ cup extra virgin olive oil
- 2 tbsp minced fresh mint, rosemary or thyme (*Note 1)
- 1 tbsp fresh lemon juice
- 2 tsp dried oregano
