I’ve tested making this corned beef dip in the oven and the slow cooker. Both work exceptionally well, leaving you with gooey cheese to scoop up using rye bread or chips.

Reuben Dip Ingredients
Here are the main ingredients required to make this baked reuben dip. They’re pretty much the exact same ingredients required to make a reuben sandwich or corned beef sliders. For the full list of ingredients, please reference the recipe card below:
- Corned Beef – You can use leftover corned beef, canned corned beef or even the sliced deli meat found at the deli counter in the grocery store. I’ve tested this hearty dip using quite a few different versions of corned beef and they all work great! You really can’t go wrong.
- Sauerkraut – Use store bought or homemade sauerkraut. Just make sure you squeeze out the excess liquid before measuring.
- Thousand Island Dressing – you can use either Russian dressing or creamy Thousand Island dressing. Here’s an in-depth article on the difference between Russian Dressing vs Thousand Island.
- Bread or Crackers – Slices of rye bread and rye crackers are traditional, but if you don’t have any on hand, or don’t care for rye, grab some Triscuits, pita bread or your favorite crackers. Sourdough Pretzel Bites would also be killer.

Step-By-Step Instructions
There aren’t too many steps required to make this cheesy dip recipe. Start to finish, you’ll be breaking out the rye chips in about 25 minutes.
- Prepare The Ingredients – Pre-heat the oven to 400°F. Add the corned beef, sauerkraut, Swiss cheese, room temperature cream cheese, sour cream, and salad dressing to a medium mixing bowl and stir well to combine.
- Prepare The Dish – Transfer the mixture to a baking dish and use a spatula to evenly spread.
- Bake The Delicious Dip – Bake for 15-20 minutes until bubbly and hot.
- Broil (Optional) – Turn the oven to high broil and brown the top for 2-3 minutes.
Crockpot Reuben Dip Directions – Throw everything in the crockpot and cook on low for 4-6 hours or high for 2-3 hours.
